Carnival Ring-Doughnuts
Ring doughnuts are the characteristic desserts of Carnival time. A light delicacy with a unique savour. No wonder it is often made and eaten during the whole year, independently of Carnival time. And you? Have you ever made ring doughnuts? |

Preparation
1. Prepare a tray covered with serviettes and a frying-pan with oil on the cooker.
2. Put the flour into a bowl. In another bowl mix the warm milk, yeast and castor sugar. Leave for 15 minutes to dissolve.
3. Pour the yeast mixture on the flour then add the melted butter and the egg yolks. With a wooden spoon stir the dough, and place it on a pastry board. Knead until completely smooth and even.
4. Put the dough back into the bowl, cover it, and at a warm place leave it for about 30 minutes to rise to double size.
5. When the dough is risen, roll out on a lightly floured pastry board to a finger’s breadth. Cut out with a 6 cm (2.36 in) diameter biscuit cutter. Gather and knead over the remaining dough, then roll out and cut again. Leave the doughnuts to rest for about 10 minutes.
6. With our finger push the centre of the dough until is becomes thin.
7. In small amounts fry the doughnuts in hot oil. Fry one side for 3 minutes, then turn them, and fry the other side for 1-2 minutes.
Attention! Make sure the oil is not too hot, otherwise the doughnuts become dark! While frying watch the doughnuts all the time so they remain nice light golden brown.
8. When fried place the doughnuts on the tray covered with serviettes, sprinkle with castor sugar, fill with apricot jam and serve.
